It may be a little bit early for Thanksgiving, but tonight I decided to get into the spirit of the holiday and make some stuffing. I was inspired by a new favorite drink that I’ve been enjoying recently at a local restaurant – a cardamom honey cappuccino. I thought about making my own cardamom honey cappuccino this morning, but settled on tea instead and after that, the thought of cardamom was in the back of my mind and taste buds all day. I’m kicking off my first $5 challenge meal with a dish that’s perfect for both breakfast and dinner. It also shares a name with my favorite season that is just upon us- red flannel season, or as most people like to call it, autumn. I was first introduced to the red flannel hash at a favorite local brunch spot and since first ordering it, I have had a difficult time ever ordering anything else. It just hits that sweet and savory spot so well. I’ve been wanting to recreate this myself  for quite some time so when I was craving beets at the end of my work day, this immediately popped into my mind. Baked Eggs With Shallots, Tomatoes & Cheese

For my last day at my old job my amazing intern Eli gave me one of the cutest things I’ve ever seen – a mini le creuset! It even matches the color of my large one. I had been thinking of purchasing some ramekins to make some baked eggs in, but this special little gift was oing to work even better. My downtime for cooking has been a bit limited recently with friends in town and starting a new job and lots of other exciting events and trips happening, but each day this adorable mini le creuset has been starting me in the face, waiting for me to cook with it. Finally, I had an evening to myself and so I stopped at the market on my way home from work, got all of the ingredients that I had been salivating over for the past month and got to work. Feta & Watermelon Salad

Summer has arrived! My apologies for the lack of posting this past week, but the warm weather and some fun events have stolen away any recent computer time. It has been time well spent though. I’ve catered a wedding party, planted a garden and spent a day celebrating my incredible grandfather as a member of the first graduating class of Queens College. Of course, a girl’s got to eat in between all of this. Inspired by all of the watermelons in the markets and planting some myself last weekend, I decided to make a salad out of one. As it may be well known by now, I’m a sucker for sweet and savory so I created a classic dish of watermelon and feta, tossed on some shallots and a little homemade dressing. Simple Sweet Potato Fries

For the longest time, I’ve been wanting to make sweet potato fries and after whipping these guys up last night, I’m not quite sure what was stopping me. This is one of the simplest snacks to prepare and if done right, is pretty darn healthy. All you need to do is chop up some sweet potatoes, toss with olive oil and seasonings of choice and place them in the oven to bake, flipping once or twice.
