This one is inspired by a couscous dish my mom always made growing up and by good friends with a healthy appetite coming for dinner. Quinoa has been my default dish these days so it’s been a challenge to think up new ideas to spruce up this superfood.

This meal is another in the garden series. Along with the other gorgeous garden veggies, I brought back two fresh picked red cabbages that have been sitting in my refrigerator for about a week now. One of them I have set aside to use for my mom’s famous cole slaw (stay tuned). The other, was tonight’s dinner: red cabbage rolls stuffed with red quinoa and goat cheese and topped with a sweet balsamic sauce.

The first time I made quinoa, I wasn’t quite sure what to do with it but my instincts led me to what is now my staple way of preparing it when I’m looking for a quick meal. Not only is this easy to make and delicious, it is packed with healthy amino acids and protein.Quinoa is a great source of both protein and amino acids.

Ok, so I got sucked into The Bachelorette this season. Roll your eyes, say what you will, it was some good old fashion entertainment and I enjoyed it! Last night, a few friends and I set aside our evenings to gather together in front of the television for the final episode. I’ve been wanting to try this recipe for red wine pasta that I came across in Real Simple for quite some time now. So, on my way home yesterday I stopped into my local wine shop and asked for their cheapest bottle of red (turns out my roommate and I often purchase the magnum size of their cheapest red – we call this living on a budget in Brooklyn).
