After my first experience with roasting tomatoes, I was inspired to try stuffing them with something. Most recipes I found called for some kind of cheese or meat stuffing, but I wanted to go a slightly healthier rout. Since I love white beans, I decided I would puree some to make my filling.

I’ve had a lull in cooking inspiration the past few days, perhaps because I was distracted by all of the Halloween festivities going on around me.  I didn’t even cook anything with pumpkin this weekend (but I did put together a great costume)! Fresh Arugula Lemon & Parmesan Salad

The other night I had dinner at Westville in the East Village and ordered what is now my new staple salad. I had forgotten how delicious something as fresh as arugula, lemon, olive oil and parmesan is.  I ordered it with some grilled chicken and it was the perfect no fuss, light but fulfilling meal.  So perfect, that I was inspired to make it for lunch the next day.  I knew this leafy green was good for you, but I wanted to do a little more research to find out exactly what was so great about arugula aside from its unique, slightly spicy flavor.

Arugula and Barley Salad

I had some barley left over from last week’s savory pumpkin and goat cheese dish so tonight I decided to go the opposite direction and use it in a refreshing salad.  I still have yet to master cooking the barley itself, but the rest of this dish was so simple to toss together.

Spaghetti Limone With Toasted Pine Nuts

One of my favorite pasta dishes is spaghetti limone and one of my favorite places to order it is Lil’ Frankies.  Being a lemon and cheese addict, this dish hits the spot every time.  Yesterday was a cold, rainy Sunday and I was craving a warm, satisfying meal but as usual I wanted to make something  healthy.

This is my new favorite fresh summer salad!  I found the idea on this site today and I will be making this a lot from now on.  The best part about it is it’s so simple to make (and cost efficient) and the flavors just all come together so nicely.
