For the longest time, I’ve been wanting to make sweet potato fries and after whipping these guys up last night, I’m not quite sure what was stopping me. This is one of the simplest snacks to prepare and if done right, is pretty darn healthy. All you need to do is chop up some sweet potatoes, toss with olive oil and seasonings of choice and place them in the oven to bake, flipping once or twice. After a year hiatus (for no good reason), I have finally gotten back into yoga. Thanks to some motivation from my roommate and a great deal at my local yoga studio, my muscles are feeling a bit more toned today, and my body a bit taller. The one and only downside to my first after work yoga class was coming out to find my wonderful local food market already closed for the evening. As hungry as I was from my vigorous, buy relaxing downward dogs and triangle poses, I wasn’t about to let this affect my newly refreshed mind. I decided to make do with what I had laying around my house and better yet, save a dollar or two, or ten. I arrived home to a sweet potato, naturally fermented pickles, yogurt, vegetable broth, eggs and a mishmash of other foods staring me in the face. After a long relaxing weekend (special related shout out below), I wanted to start my Monday off right, so I challenged myself to make a dish that I had once failed at preparing properly: white bean burgers. The first time around, I was convinced that I could make these without any kind of starchy binding, and that an egg would be enough to hold the ingredients together- but alas, as the nicely formed patties broke apart in my pan, I knew I had to give this another go. Enter one of my favorite ingredients for cookie making, quinoa flakes.

I can’t take credit for this dish. While I did help compile some of the added toppings, the base of this meal comes from the very talented Richie, who also just so happens to be the designer behind Sprout & Pea. Richie first introduced me to roasted asparagus with crushed pistachios over a year ago and it has since become my favorite way to prepare the delicious green. What he has neglected to inform me of  until now, is that he sometimes tops this off with a sunny side up egg. Since this sounded like my dream dish, the other night we joined forces with some leftovers around his house and made what I like to call pistachio roasted asparagus with a sunny side up egg á la mode.

On Sunday, my roommate and I hosted an Oscar party at our apartment which excited me not only because it was an opportunity to get dressed up, but because it was a great excuse for me to try out some new recipes for my friends. I’m a sucker for some good guacamole, and a fiend for Greek yogurt in any recipe, so when it came time to make some party dips, I decided I would try a little something different and combine the two.

Growing up, my family ate a lot of chicken for dinner and over the years my mom would use her culinary knowledge to whip up new recipes that never ceased to satisfy our big appetites. After so many new variations and “what are we having for dinner” questions, my mom just began to respond with “chicken something” and it stuck. When I was home in Miami this weekend, my mom made my favorite “chicken something” dish- chicken cutlets with a dijon lemon shallot sauce.
