I’ve never been a fan of mushrooms, but that all changed this evening when I discovered the wonderful flavors of shiitake bacon. Recently, I’ve been attempting to curb my winter dining out addiction and really focus on cooking delicious plant-based meals, and this shiitake bacon is the perfect way to satisfy my cravings for rich, savory meaty flavors. The weather has been all over the place lately and with that, so have my eating habits. It seems that this warm one day, freezing the next pattern also seems to send me into a pattern of home-cooked healthy meal one day, mac and cheese at my favorite local spot the next. On one such recent warm day, my body had had enough of eating out, so when I awoke to the sun shining, I immediately jumped from my bed and headed to the market for some breakfast inspiration. Thai food is my weakness in the winter. I say weakness because when I’m craving it, I always order in from my favorite spot down the street and enjoy an ultra veg night on my couch with a good movie and a glass of wine. This isn’t necessarily a bad thing, but after ordering thai food a few too many nights in one week, I decided it was time to take this craving and turn it into something productive– and a bit healthier. You know those days where everything in your tiny little world seems to stand still for just long enough to take it all in? Those days where you just feel grateful for it all? Saturday was one of those days for me, and it was a simple day too. I woke up, met my cousin for brunch and we enjoyed some delicious poached eggs with herbs and cheese outside on a rare 60 degree day in Brooklyn. We caught up, walked around, did a little shopping, and explored neighborhoods by foot. On our walk, I received a phone call from one of my most favorite people– just to say hello and that he was thinking of me as he biked around where the wind took him on this unbelievably beautiful day. As someone who loves to cook, sometimes the best distraction from a bad day is brainstorming a meal and experimenting in the kitchen. So, this morning, a not-so-hot feeling me started browsing eggs on foodgawker, quickly to come across an image of scrambled eggs and asparagus. This week I had the opportunity to bake some sweet treats for the lovely Thistle & Clover boutique in Fort Greene, Brooklyn. The awesome ladies who run this adorable shop hosted a trunk show with two of their fantastic designers, Jene DeSpain and Guy French, and I made some cute cookies and brownies to satisfy the hungry after work crowd browsing the gorgeous jewels and blazers on display. After deciding on almond butter lapsang brownies, I thought I might browse one of my favorite food blogs for a second, less chocolaty idea and so I came across these lemon and lavender cookies on Elana’s Pantry.
