You know those days where everything in your tiny little world seems to stand still for just long enough to take it all in? Those days where you just feel grateful for it all? Saturday was one of those days for me, and it was a simple day too. I woke up, met my cousin for brunch and we enjoyed some delicious poached eggs with herbs and cheese outside on a rare 60 degree day in Brooklyn. We caught up, walked around, did a little shopping, and explored neighborhoods by foot. On our walk, I received a phone call from one of my most favorite people- just to say hello and that he was thinking of me as he biked around where the wind took him on this unbelievably beautiful day. As someone who loves to cook, sometimes the best distraction from a bad day is brainstorming a meal and experimenting in the kitchen. This week I had the opportunity to bake some sweet treats for the lovely Thistle & Clover boutique in Fort Greene, Brooklyn. The awesome ladies who run this adorable shop hosted a trunk show with two of their fantastic designers, Jene DeSpain and Guy French, and I made some cute cookies and brownies to satisfy the hungry after work crowd browsing the gorgeous jewels and blazers on display. After deciding on almond butter lapsang brownies, I thought I might browse one of my favorite food blogs for a second, less chocolaty idea and so I came across these lemon and lavender cookies on Elana’s Pantry. After a long relaxing weekend (special related shout out below), I wanted to start my Monday off right, so I challenged myself to make a dish that I had once failed at preparing properly: white bean burgers. The first time around, I was convinced that I could make these without any kind of starchy binding, and that an egg would be enough to hold the ingredients together- but alas, as the nicely formed patties broke apart in my pan, I knew I had to give this another go. Enter one of my favorite ingredients for cookie making, quinoa flakes.

Eggs Benedict has always been one of my favorite brunch indulgences but I love when I find healthy variations of it on restaurant menus. Enter my favorite vegetable- the artichoke. I was eating a whole artichoke for dinner one night and when I got to the heart of it, I realized that it was the perfect little shape for a poached egg to rest in. Since then, I’ve been scouring the internet for the perfect sauce to top this idea off with. I wanted to do something a little different than the usual Hollandaise, and I finally came across a great recipe for red pepper aioli that made my mouth water a little bit.

When Brooklyn starts to get cold, it seems there’s no better way to spend a weekend or evening than cozied up with good friends sharing delicious food, and this weekend was chock full of this.
