I had a pretty ridiculous amount of goat cheese left over from a recent supper club dinner. Sometimes I over estimate to be safe. This time, I really overestimated. So, when some friends invited me to brunch on Saturday, I decided (knowing brunch was also in the cards for Sunday) that I would save some money, take advantage of the copious amounts of my favorite cheese in the refrigerator, and make myself an impromptu breakfast. There’s a first time for everything and this week was both my first bike accident and my first time making lentils. My weekend started off great with friends and family in town- birthday celebrations, brunches, dinners, a whole lot of cake and a whole lot of love. On Sunday, we decided to make the most of my guests’ last day in town and also take advantage of the fleeting 80 degree weather. So, my friends rented some bikes and we set out for the tour de Brooklyn (not to be confused with the Tour de Taco- an actual annual and awesome event). Things started out great and it was shaping up to be a beautiful afternoon. Then it happened- my tire and the sidewalk got into a little quarrel that resulted in my face meeting the ground. I’ve come across avocado pasta in my internet food scouring several times over the past few years and I’ve always been tempted to make it, but I’ve also always been a bit weary of the idea. Something about the thought of a warm avocado sauce left an uneasy feeling in my stomach, although as a lover of baked avocados and of guacamole, I’m not so sure why. I’m kicking off my first $5 challenge meal with a dish that’s perfect for both breakfast and dinner. It also shares a name with my favorite season that is just upon us- red flannel season, or as most people like to call it, autumn. I was first introduced to the red flannel hash at a favorite local brunch spot and since first ordering it, I have had a difficult time ever ordering anything else. It just hits that sweet and savory spot so well. I’ve been wanting to recreate this myself for quite some time so when I was craving beets at the end of my work day, this immediately popped into my mind. I knew it would be a cheap dinner, but I did not realize that I could make this for well under $5. Here’s the cost breakdown: Continue reading “Red Flannel Hash” »

Yesterday I read this article about potatoes, and specifically purple potatoes, lowering blood pressure and boosting your overall health. Yesterday, I was also craving pizza. Naturally, the first thing that came to mind was the recent potato pizza I had made. So, with my mind set on a purple and sweet potato pizza for dinner, I wandered through the farmers market after work and finally at the very last stand, found some beautiful purple potatoes. There’s been a welcome fall chill in the air recently, and it seems that summer may soon be coming to an end, but my cravings for Mexican food certainly are not. This summer, more than ever, I have been dreaming of the tangy, spicy cuisine day and night, and seem to have an undying hankering for Micheladas. Instead of eating out at my favorite neighborhood spot the other night, I decided to take on this craving and cook a healthy meal in the form of my take on Mexican quinoa.
