Recently, my friend Caitlin asked me if I would give her a lit­tle cook­ing les­son, and since there’s noth­ing that I love more than cook­ing with friends and watch­ing their eyes widen as ingre­di­ents fuse together, I jumped at the oppor­tu­nity. We had just received our lat­est CSA box and it was filled with sum­mer squash that I was itch­ing to cook with. I wanted to keep this meal sim­ple so after some search­ing, I decided on a Martha Stew­art recipe that I came across for roasted sum­mer veg­eta­bles and basil over pasta. Read more:

Some­times you just can’t eat enough of your favorite food. For me, that’s goat cheese (or any cheese for that mat­ter). This is why I decided to take advan­tage of the giant log of the tangy, smooth and crumbly white fro­mage that I had left­over from my Sat­ur­day morn­ing break­fast. It was Sun­day night, and I wasn’t about to go out to the mar­ket and pur­chase gro­ceries for an end of the week­end din­ner, so I decided to make do with what I had around. Read more:

Wel­come to the start of my twelve plus weeks of one handed meals. Turns out, my lit­tle bike acci­dent resulted in me in a hand splint and the pos­si­bil­ity of surgery. Cross­ing fin­gers that the lat­ter is not nec­es­sary. When I heard this news, my first thought was– I’m not going to let this hold me back in the kitchen. Then, I tried to open a can of can­nellini beans. I was only par­tially defeated, get­ting the can halfway open with the use of a can opener, a knife, a spoon and my armpit. But after a good twenty min­utes, I got those beans into the food proces­sor and made myself some deli­cious bean purée. That was when I decided to take this lit­tle set back as an oppor­tu­nity to get cre­ative, and to invest in an elec­tric can opener. I love farro for its tex­ture, specif­i­cally the nut­ti­ness it adds to a dish, but I don’t love it for its price tag. It’s also not exactly gluten-​​free, so it has become an ingre­di­ent that I enjoy once in a blue moon when the mood really strikes. Well, the other night the mood struck. As I was walk­ing through the isles of my local mar­ket with arugula in my bas­ket, crav­ing some­thing refresh­ing for din­ner, I hap­pened to notice a bag of farro on the shelf. It’s rare that my local mar­ket has this delec­table grain in stock, so after a bit of brain churn­ing, and a lit­tle drool­ing over fresh herbs that I spot­ted in a nearby isle, I tossed the farro into my bas­ket.
