This one is my mom’s original recipe and a smart way for her to get me to eat my vegetables when I was growing up. I made this recently for some friends who, like myself, drooled over it, so I decided to make some again for pumpkin carving night. While the cream cheese factor isn’t the healthiest, it’s worth it!

This one isn’t so much an elaborate recipe as it is one of my most favorite simple fresh side dishes to toss together. Aside from a big salad, broccoli is one of the things I crave most when I’m in the mood for something light and refreshing and when I want to get my nutrients on. All I do for this is chop up one head of broccoli and 3 cloves of garlic. I toss the broccoli and garlic in a large pan with a generous drizzle of olive oil, add the juice of one lemon and let simmer on low-medium heat until it’s soft and bright green. This is so simple and quick and seemed to be a big hit with my friends the other night which always makes me happy!
