Broccoli & Leek Puree

This one is my mom’s orig­i­nal recipe and a smart way for her to get me to eat my veg­eta­bles when I was grow­ing up.  I made this recently for some friends who, like myself, drooled over it, so I decided to make some again for pump­kin carv­ing night.  While the cream cheese fac­tor isn’t the health­i­est, it’s worth it!

This one isn’t so much an elab­o­rate recipe as it is one of my most favorite sim­ple fresh side dishes to toss together.   Aside from a big salad, broc­coli is one of the things I crave most when I’m in the mood for some­thing light and refresh­ing and when I want to get my nutri­ents on.  All I do for this is chop up one head of broc­coli and 3 cloves of gar­lic.  I toss the broc­coli and gar­lic in a large pan with a gen­er­ous driz­zle of olive oil, add the juice of one lemon and let sim­mer on low-​​medium heat until it’s soft and bright green.   This is so sim­ple and quick and seemed to be a big hit with my friends the other night which always makes me happy!
