When we’re not having fleeting days of summer weather, it certainly feels like fall has arrived, and I’m enjoying every minute of it. The cozy sweaters, the nights snuggled up with your loved ones enjoying a glass of wine, the dinner parties galor. The one thing that most signifies fall to me is food. That transition into holiday spices and warm meals is one that comforts me to no end. After making an improvisational stuffing with cardamom, orange zest, ginger and honey, I found myself days later still craving the taste and aroma of cardamom. I had a ton of scallions leftover from my breakfast the other morning so I spent much of my day today browsing my favorite food porn sites for ideas on what to do with them. By the end of the day, I was craving a veggie-full meal and thought I would just roast them with some other root vegetables and call it a night. That’s when I had the idea to put a little creative presentation spin on one of my favorite dishes, roasted root vegetables with Greek yogurt. Continue reading “Roasted Root Veggie Bundles” »

Ever since I purchased my ice cream machine, I’ve been racking my brain for interesting ingredients to toss into it. I had big plans to make pineapple sage ice cream with the fresh greens I picked from the garden, but unfortunately when I went to grab them from my refrigerator the other day, they had wilted to an unpleasant state. I was still in the mood to mix up some ice cream, so I turned to another unusual ingredient in my kitchen- rosewater. I had a feeling I would find this pretty tasty as I tend to like unconventional combinations, but the real test would be the palettes of my friends. The other night, I noticed some bananas in the basket on my kitchen counter that were ready for the trash can. Being that I don’t like to waste anything, I brainstormed a bit on what I could make with this now blackened on the outside, overripe on the inside fruit. Last year, I was thrilled to find out that I had won first place in Healthline’s healthy holiday dessert contest. I was doubly excited when I found out that I would be receiving a big amazon gift card. Of course, along with this excitement came a bit of a baffled feeling as I was faced with the big decision of what to use this card for in the big world of Amazon. It took me many months, but I finally decided to purchase something I’ve been wanting for quite a while – an ice cream maker! I knew I wanted to use this fancy machine to make, not just ice cream, but a healthier take on traditional ice cream.

For the longest time, I’ve been wanting to make sweet potato fries and after whipping these guys up last night, I’m not quite sure what was stopping me. This is one of the simplest snacks to prepare and if done right, is pretty darn healthy. All you need to do is chop up some sweet potatoes, toss with olive oil and seasonings of choice and place them in the oven to bake, flipping once or twice. Since I had some time to kill while these were baking, I thought I would make some tasty dips for my french fry dinner. Continue reading “Simple Sweet Potato Fries” »
