Raw Vegan Chocolate Chip Cookie Dough

I’m a bit of a Pin­ter­est addict these days. It’s become an incred­i­ble source for dis­cov­er­ing new recipes and recently I came across quite a few dif­fer­ent pins for vegan cookie dough– need­less to say, my curios­ity was piqued. On the same night that my friend came over for a veg­gie pasta cook­ing les­son, I decided that I would also throw this super sim­ple sweet snack into the mix, both to prove to her how easy it can be to make dessert, and to curb my choco­late crav­ing. I was skep­ti­cal that dough made out of cashews and oats would taste any­thing close to the cookie dough that we all crave from time to time. It turns out, this healthy dough tastes extremely sim­i­lar. Despite being full from pasta, we downed all of these lit­tle guys (we made a small batch).  Here is the recipe for the healthy ver­sion of everyone’s secret guilty pleasure…

2/​3 c raw cashews
1/​3 c oats
2 Tbsp Agave
1 Tbsp Maple Syrup
1 Tsp Vanilla Extract
1/​4 c Choco­late Chips

Com­bine oats and cashews in food proces­sor and blend until crushed into a flour. Add the agave, maple syrup, and vanilla extract and blend again to form a dough. Mix in the choco­late chips and shape into small balls.
