Mini Zucchini & Potato Pizzas

What party is com­plete with­out fin­ger food? I knew I wanted to serve some­thing cre­ative for our Oscar party that we hosted last week and I had remem­bered a recipe for mini zuc­chini piz­zas that I once come across on skinnytaste.com. I had always wanted to try this, and this was a per­fect occa­sion. In addi­tion to the zuc­chini, I decided to do some lit­tle potato piz­zas as well.

I love the idea of this recipe as a fan­tas­tic healthy alter­na­tive to heavy, doughy piz­zas and they were a huge hit among my movie and healthy food lov­ing friends. This is also super sim­ple to make, but you do have to move quick when broil­ing them so they don’t burn. I used reg­u­lar extra vir­gin olive oil in a bot­tle to coat the zuc­chini and pota­toes instead of spray olive oil. Just pour a lit­tle in a bowl and use a spoon to rub the oil on them. 4 slices large zuc­chini 1/​4″ thick (or 1 medium zuc­chini cut on diag­nal)
Spray olive oil (I used reg­u­lar bot­tled olive oil)
2 tbsp pizza sauce
1/​4 cup part skim moz­zarella
salt and pepper

Cut zuc­chini (and pota­toes) about 1/​4 inch thick. Coat both side lightly with oil and sea­son with salt and pep­per. Broil or grill for about 2 minute on each side. Top with sauce and cheese and broil for an addi­tional minute or two. (Care­ful not to burn cheese)
