This one goes out to all of the breakfast for dinner fans out there (and to a few very special ones in particular). My sweet tooth came back the other night so I attempted to nip it in the bud by making some pancakes. I’ve also had beets on the mind lately, so I thought I would go ahead and try to combine the two and sure enough what you see pictured above turned out to be a tasty hit-the-spot dinner.

Quinoa has become one of my favorite meals over the past year, so I am constantly trying to think up new ways to prepare this wonderful superfood. I had purchased a large package of compari tomatoes about a week ago that I never got around to using so I thought I would make use of them before they went bad and roast them with some garlic and olive oil (delicious on their own).

Last weekend was my third visit to this little hidden gem in South Williamsburg. With it’s cute antique decor and very tasty menu, Rabbithole is one of my new favorite discoveries. My first time here, I met some friends for a summer Sunday brunch and we were lucky enough to snag a table in their gorgeous garden. Although a less adventurous choice, I always love a great omelette, so I ordered one with roasted tomatoes, caramelized onions and goat cheese and it certainly delivered. It was cooked to perfection and perfectly flavorful too. Once the sun sets, the lights dim and the candles come out, creating that perfect cozy environment that most places strive for (but often just miss). Rabbithole is where you want go to relax on a cold winter night.
