Almond & Beet Pancakes

This one goes out to all of the break­fast for din­ner fans out there (and to a few very spe­cial ones in par­tic­u­lar). My sweet tooth came back the other night so I attempted to nip it in the bud by mak­ing some pan­cakes. I’ve also had beets on the mind lately, so I thought I would go ahead and try to com­bine the two and sure enough what you see pic­tured above turned out to be a tasty hit-​​the-​​spot din­ner.

Quinoa With Garlic Roasted Tomatoes, Chickpeas & Feta

Quinoa has become one of my favorite meals over the past year, so I am con­stantly try­ing to think up new ways to pre­pare this won­der­ful super­food. I had pur­chased a large pack­age of com­pari toma­toes about a week ago that I never got around to using so I thought I would make use of them before they went bad and roast them with some gar­lic and olive oil (deli­cious on their own).

Beet Avocado & Goat Cheese Sandwich

Last week­end was my third visit to this lit­tle hid­den gem in South Williams­burg.  With it’s cute antique decor and very tasty menu, Rab­bit­hole is one of my new favorite dis­cov­er­ies. My first time here, I met some friends for a sum­mer Sun­day brunch and we were lucky enough to snag a table in their gor­geous gar­den. Although a less adven­tur­ous choice, I always love a great omelette, so I ordered one with roasted toma­toes, caramelized onions and goat cheese and it cer­tainly deliv­ered. It was cooked to per­fec­tion and per­fectly fla­vor­ful too. Once the sun sets, the lights dim and the can­dles come out, cre­at­ing that per­fect cozy envi­ron­ment that most places strive for (but often just miss). Rab­bit­hole is where you want go to relax on a cold win­ter night.
