I had one too many glasses of vino last night which caused me to hit the vend­ing machine for some potato chips right before I left work today. They may have been gluten-​​free veg­gie chips, but they left me feel­ing greasy and slug­gish. By the time I had walked home over the bridge in the 93 degree New York City weather, my taste buds were crav­ing some­thing very light and refresh­ing for din­ner.
Tomatoes and Hearts of Palm
Enter some of my favorite food items: Hearts of palm, toma­toes, shal­lots, vine­gar, lemon and olive oil. This one is very sim­ple and easy to pre­pare and per­fect on a hot sum­mer day.

2 whole toma­toes or 2 hands full of cherry/​assorted small toma­toes
1 can hearts of palm
1/​2 small shal­lot
1 1/​2 tbs extra vir­gin olive oil
1/​8 cup red wine vine­gar
1/​2 lemon
sprin­kle of black pep­per or gar­lic pepper

chop toma­toes, hearts of palm and shal­lots and mix with olive oil, vine­gar, lemon and pepper
